CTC Tea - The acronym “CTC” stands for Cut Tear and Curl. A process the tea leaves are subjected to after gentle removal of moisture to concentrate the juices in the leaf. This then helps in oxidation of the leaf contents once it is macerated in the CTC machines. The end product are small granules of tea which are dried at a particular stage to stop the oxidation process and preserve the desired quality. Thus producing CTC black tea which provides for an infusion with good strength and flavor. Orthodox Tea – As the word denotes, this is the old method of making tea whereby the fresh tea leaves are subjected to hard withering where considerable moisture loss takes place and the juices get concentrated in the leaf. The leaves are then rolled under pressure to help extract the juices while mixing them with the rolled leaf at the same time. This is then (fermented) oxidized to achieve the desired flavour. This process gives more flavoury teas with milder liquor. Darjeeling is known as the best area for production of good quality orthodox tea the world over. that is the only similarity, the green tea is not oxidized (fermented) but steamed or boiled to stop the enzyme activity. This results in enriching the tea with anti-oxidants. The infusion from green tea will not be reddish in colour like the black teas, as tannins are rendered mild when the tea is steamed. Small farmers in Assam are producing great quality GREEN tea in small batches as against the commercially produced green tea by large operators.
